Louise Baxter’s Fruit Crisp

We had to get a new stove and I asked friends for an easy to bake recipe using fresh blueberries. My college friend Louise Baxter shared her recipe for a fruit crisp. It was just as easy and yummy as Louise said it would be. We served it warm with vanilla ice cream which she also recommended. 534004_10201873820473551_597983911_n

  • fresh fruit (I used two pints of very ripe, almost overripe, blueberries)
  • 1/4 cup butter
  • 1/2 cup flour
  • 1.2 cup brown sugar
Combine flour and sugar, and cut in the butter using a food processor or pastry cutter until it is very crumbly (I softened the butter because I used a pastry cutter) Spray an 8x8 dish with non-stick spray (or make do with what is similarly sized as I did) and add fruit to the baking dish Sprinkle the crumbly mixture over the fruit. Bake at 400 for 15-20 minutes or until golden. Louise said this works with other fruits when in season.
