Louise Baxter’s Fruit Crisp

We had to get a new stove and I asked friends for an easy to bake recipe using fresh blueberries. My college friend Louise Baxter shared her recipe for a fruit crisp.
It was just as easy and yummy as Louise said it would be. We served it warm with vanilla ice cream which she also recommended.

fresh fruit (I used two pints of very ripe, almost overripe, blueberries)
1/4 cup butter
1/2 cup flour
1.2 cup brown sugar

Combine flour and sugar, and cut in the butter using a food processor or pastry cutter until it is very crumbly (I softened the butter because I used a pastry cutter)

Spray an 8×8 dish with non-stick spray (or make do with what is similarly sized as I did)
and add fruit to the baking dish

Sprinkle the crumbly mixture over the fruit.

Bake at 400 for 15-20 minutes or until golden.

Louise said this works with other fruits when in season.
